Polly's Pancake Parlor is simply the BEST pancake restaurant in the world- Bar None. Anyone who has ever eaten there would know this to be the truth! I've been eating at Polly's now for over 19 years, and the food tastes better each year. Polly's is a piece of Americana...a real part of history in the ares. Polly's is easily to find- take exit 37 or 38 off route 93 North and go into Franconia center. Pass Kelly's food market and look for route 117 (Sugar Hill) on your left. Follow up the hill and Polly's is about 3/4 mile on your left..you cannot miss it! The restaurant is a wooden marvel! Outside on the lawn is "Trot Trot II" (The second incarnation of a famous wooden horse sat on my thousands of kids and adults!!) As you enter Polly's the senses are astounded by the dreamy aroma of Maple, Pancakes, Pies, and the world's best coffee. The entrance is like a museum- filled with memorabilia from the 1800's and beyond, and has many wonderful gifts, maple products made by Polly's, and a wonderful handmade house with figurines. As you step forward towards the restaurant you will be greeted by Mrs. Nancy Aldrich (Owner) or her wonderful daughter Kathy Cote or Kathy's husband Dennis Cote. The Aldrich-Cote family has been operating this fine restaurant for 65 years and with the help of Kathy and Dennis, the wonder and excitement of this incredible place will live on for many more years. To say Polly's serves Pancakes is a misnomer! They serve the finest Pancakes, Waffles, French Toast, Grilled Cheese/tomato, home made muffins and pies in the entire world! The pancakes are simply exquisite. There are whole wheat, buckwheat, cornmeal, oatmeal-buttermilk, and plain. They can be created with blueberries, coconut, or walnuts too. The waitress greets you with a small tray that contains pewter jars filled with maple cream, maple sugar, and a glass cruet filled with pure maple syrup- in fact all of these are made from pure maple syrup made right here at Polly's Hildex Maple Sugar farm! The pancakes are light, fluffy, and one cannot ever get enough- but they are filling!! The cast iron grill is right in the middle of the restaurant in view of all, and the waitresses create your meal fresh right there! The ceiling has newspapers and posters of all kinds dating back to the early days of the 1920's. There are also artifacts from the family on display from their ancestors. Polly's is a combination restaurant and museum! The maple products are the best I ever tried- and I consider myself to be a real Maple conniseur. One visit to Polly's Pancake parlor and you will visit again and again and again. This place has a mystique unlike any other place I have ever eaten. If you are lucky enough to get a window view, you will have a panoramic view of the Franconia mountains as you eat your meal. If you love pancakes and maple, Polly's is truly the stuff that dreams are made of! less
