I'm a foodie with a warm place in my heart for good presentation and nice wine. I travel a lot, and a great deal of my business and personal entertaining is done in restaurants. Adventurous or offbeat dining appeals to me. The weirder something is, the more likely I am to try it, yet somehow I never developed a fondness for nouveau cuisine unless the presentation is backed up by flavor, texture, and correct handling. I have a preference for upscale dining over casual dining. When I review a restaurant, I try not to compare apples to oranges. I don't believe a family restaurant or a hole-in-the-wall ethnic diner needs to be held to the same standards as an upscale steak house in terms of decor or formality in service. When I rate the service or decor, it is proportionate to other restaurants of the same type. I compare steak houses to steak houses, and ethnic diners to ethnic diners. If there's a noticeable discrepancy between the kind of restaurant the establishment advertises itself as being and what it actually is, I judge the restaurant based on the type and class of restaurant it claims to be. However my standards of cleanliness apply to everyone. There are only three ways to get a one-star rating from me. The first way is to make me (or someone in my dining party) physically ill. The second way is to have a blatantly unsanitary situation such as flies in the indoor dining area or unwashed utensils. The third way is to serve me inedible food twice in a row. If you keep a reasonably clean restaurant, if the food is edible, and if you don't cause anyone to go to the emergency room with anaphylaxis or food poisoning, you get two stars no matter how bad the service is. Before giving a single star, I also compare notes with other people to make sure I'm not just being biased. Earning five stars from me is difficult. It's not OK to just impress me once. You must display consistency by impressing me on every visit, at least half a dozen times, over the span of a year or more. The standards of food, atmosphere, and service must be superior based on the standards that apply to the class of restaurant your advertisement present your restaurant as being. Present yourself as an upscale restaurant, and I expect a good wine list, tablecloths, sophisticated service, and a low-stress dining experience. Present yourself as an ethnic diner, and you can take five stars from me without the tablecloths. Present yourself as something you're not, or fail to live up to your own advertising, and it will cost you a star.
