Rafey, the owner of Imperial Fez, used to own Mahtam Fez in Vail, Colorado.
A bunch of us went to his Vail restaurant and had a blast. Sitting on floor pillows surrounding a large, round table, we found
ourselves suddenly transported to Morrocco. Starting out with a fresh, hot towel for our hands (you'll need
it because the fare is to be eaten by hand) and some French beer, the appetizer
consisting of a sweet, cinnamon laced dish started the evening. There
were so many different delights of lamb, lemon, couscous, olives and
various spices, it was hard to keep it all seperated in our memories
-- the beers didn't help either. After several hours, that didn't seem like hours, of dining, drinking
and belly dancing, we left with a satisfied feeling and a memory that
would last a lifetime. Be prepared to stay awhile. This is not a restaurant that you get in and
get out. One needs to be able to enjoy trying new regional meals from
northern Africa, but it's almost worth the visit simply for the
mini-vacation.

Now this place does what a restaurant should do. They give you
food and transport you to the place where this type food should
be eaten. Bravo! Make dining fun again and other restauranteurs
take note.
